Brabender FarinoGraph sets new benchmarks in flour testing

05 March 20253 min reading

Since its introduction in 1928, the Brabender Farinograph measuring system has been the most frequently used tool for determining the quality of flour. Its latest model, introduced in 2023, features advanced automation, increased accuracy, and time-efficient operations for optimized dough analysis.

The Brabender Farinograph ensures reliable quality control along the entire value chain by precisely determining water absorption and rheological dough properties such as development time, stability, and degree of softening. Trusted by milling companies, bakeries, pasta manufacturers, ingredient suppliers, and research institutes worldwide, it provides precise results in Farinograph Units (FU) in accordance with national and international quality standards, e.g. ICC, AACCI, and ISO.

The new Brabender FarinoGraph offers a torque range of 28 Nm to handle even the hardest doughs. It offers unmatched application versatility with three mixer sizes – 10g, 50g, and 300g. Whether testing small sample sizes for wheat breeding and development or ensuring compliance with ICC, AACCI, and ISO standards in large-scale production, it delivers precise and reproducible results. Special attachments extend the range of applications: The P600 Planetary Mixer enables precise analysis of rye doughs and, for instance, biscuit mixes. The grain hardness, which is important for industrial wheat milling, can be measured with the Hardness Tester. For testing gluten-free doughs, the FarinoAdd-S300 tool allows for reliable water absorption and consistency measurements in visco-inelastic doughs.

SMARTER TESTING, FASTER RESULTS

With a built-in touchscreen and industrial PC, the Brabender FarinoGraph operates seamlessly without requiring external computer devices. The MetaBridge device software, a browser-based platform, enables real-time remote access from any device, allowing users to monitor, analyze, and manage measurements from anywhere – whether in the lab, in the office, or on the go.

Automated evaluation functions, in particular comparisons with reference curves and a correlation function for comparing multiple measurements, increase the accuracy and consistency of flour analyses. AI-based measurement predictions reduce test times by up to 50 %, while intelligent auto-stop criteria reduce test times by up to 25 % once all relevant evaluation criteria have been recorded. Measurement results are automatically documented and stored and can be seamlessly transferred to LIMS and ERP systems, eliminating manual data entry and transcription errors. This enables laboratories and production facilities to ensure quality in a centralized, standardized, and error-free manner.

MetaBridge also supports remote maintenance and diagnostics. This ensures minimal downtime and keeps the Brabender FarinoGraph equipped with the latest software advancements, maintaining peak efficiency in quality control laboratories.

OPTIMIZED WATER DOSING FOR STANDARDIZED, REPEATABLE RESULTS

The AquaInject automatic titration system ensures precise, fully automated water addition. It allows users to set predefined water amounts and automate the titration process with pinpoint accuracy. By continuously adjusting water dosing based on real-time consistency measurements, the AquaInject maintains the 500-line precisely, ensuring flour samples reach the target dough consistency without operator intervention. This not only eliminates human error but also enhances reproducibility, delivering consistent results.

With nearly a century of expertise in flour and dough analysis, the Brabender FarinoGraph remains the gold standard for quality control in the grain and flour processing industry. It ensures that every batch of flour meets the highest quality standards and fulfills agreed product specifications. Designed to adapt to evolving industry needs, the Brabender FarinoGraph continues to set benchmarks for flour testing.
